Cream-free Cream of Broccoli Soup

Ingredients

15 oz can small yellow potatoes
1 medium size Spanish onion finely sliced
3 cloves of garlic roughly chopped
2 broccoli stalks cut into small pieces and steamed
2 leeks washed and cut into pieces
4 cups of vegetable broth
2 tbs of olive oil
1 tbs low fat mayonnaise
1 tsp of chili powder
1 tsp of cumin powder
1 tsp of turmeric
Season with salt and ground black pepper to taste
1 tbs fresh cilantro

Instructions

Saute onion with garlic in olive oil in a large pan
Add vegetable broth to the pan and let it boil gently
Add broccoli and leak and all other ingredients to the pan with the exception of cilantro
Cook for about 5 minutes until broccoli and leaks are cooked through
Blend the broth and the vegetables in a blend in about 3 batches and mix thoroughly
Garnish soup with fresh chopped cilantro

Cooking time should be approximately 20 minute. Recipe should yield 4 generous servings.
