Dinner for one: Sardines with Asian Chives
Ingredients
2 small white onions roughly diced
1 clove of garlic
10 Asian chives chopped into half inches
1 yellow ripped plantain sliced thinly into half moons
4 button mushrooms roughly chopped
1 small can of sardines with jalapeno packed in oil
Half of an avocado sliced into big chunks
Juice of half a lemon
1 tps fresh coriander leaves
Instructions
Pour the oil from the can of sardines into a skillet and set the sardines aside
Saute the white onions, garlic and chives for a few minutes
Add the plantain and mushroom in to the skillet and cook for about five minutes
Finally, add the sardines and avocado and squirt lemon juice and cook for about minute
Garnish with cilantro leaves
Recipe yields one generous serving. A quick and healthy balanced meal, which is perfect for either lunch or dinner.
