Honey Glazed Brussels Sprouts
Ingredients
One large sliced yellow onion
2 tbs olive oil
1/4 tsp cumin seeds
1 tsp minced garlic
1 tsp minced ginger
1 lb Brussels sprouts, each chopped in two halves
1 lemon (juice and zest)
1 tsp red chilly flakes
1 tbs honey
salt to taste
1 tbs raisins
2 tbs chopped walnuts
Instructions
In a stainless steal pan (do not use a nonstick pan for this recipe), gently cook onions in oil on medium heat for about 15 minutes, stirring gently to avoid burning but simply caramelizing the onions while scraping any bit stuck to the bottom.
Once the onions have caramelized, drizzle a drop of more oil and then add cumin seeds, garlic and ginger and cook for a few minutes.
Place the Brussels sprouts in the pan, together lemon zest and juice, chilly flakes and honey and season with salt to taste and then cover the pan with a lid and cook for a about 15 minutes.
Top the cooked dish with raisins and walnuts.
Serve this warm as a side dish with grilled fish or chicken. Recipe should yield four to six servings.
